Lazy Mom's Paella


Paella makes us happy!

So anyway, I woke up one morning with a hankering to cook paella and I did, with a bit of help from my beloved pantry standbys that take a couple of steps out of the cooking process. So here it is, my recipe for Lazy Mom’s Paella:

  1. Cook three cups of rice, dropping in two bouillons of chicken broth into the pot to give it a subtle “chicken” flavor. Set aside when done.
  2. Saute a kilo of chopped chicken in garlic and onion in medium heat. When chicken starts to juice up, add in half a kilo of sliced chorizo. Stir in strips of bell pepper when chorizo is done. Set aside.
  3. Saute one and half kilos of clam in ginger. When cooked, set aside.
  4. Now it’s time to put the paella all together! I did my cooking in two batches because the ingredients won’t fit in one pan.
  5. Take half the cooked rice, and place it in a pan in medium heat. Stir in half the chicken and chorizo mixture, adding a pack of tomato sauce and a can of peas in the process. Stir in cooked clams and its juices as well. Mix thoroughly.
  6. Serve!

I loved it! More importantly, it didn’t take too long to make :)
